I love all sorts of pizza, but New York Style tends to be the type of pie I eat most.  That being said, my absolute favorite New York style pizzeria in Northern Colorado is Pizza Casbah in Fort Collins.

I've yet to find a better New York Style pizzeria in Colorado, and try to visit as often as I can.  The restaurant is located directly across from the Colorado State University campus on Laurel Street. The menu pricing is incredibly affordable, no doubt with the town's college students in mind.  If you happen to visit between 2-5 pm on Tuesdays, you can even get $1.00 cheese slices with no limit!

When you first walk into Pizza Casbah, you immediately feel the vibe of a New York style pizzeria.  From the black and white checkered floor, to the bustling atmosphere, you almost forget you're in a Northern Colorado eatery.

   



The restaurant's prized centerpiece is a mural of New York's most famous celebrities, which run the gamut from Lucille Ball to the Beastie Boys, all hanging out in a New York pizzeria.  My kids were pretty darn impressed that I could name every celebrity featured in the mural!



Something that always gets me perturbed, is when pizzerias skimp on their pizza.  Particularly, when they sell less than generous portions, and pass them off as standard sizes.  Let me tell you that Pizza Casbah definitely kicks it up several notches above the competition in this regard.  Behold..

Pizza Casbah's extra large pizza box, easily has seating for four!


While many pizzerias consider a 16" pizza to be an extra large pie, Pizza Casbah's "Extra Large" is a whopping 24 inches!  It really is a sight to behold, especially when the box covers your entire table. I usually order one extra large pizza for my family of five, along with an order of garlic knots, and we always end up taking leftovers home of both items. We always need to push two tables together, so everyone has a place to eat.  If the restaurant happens to be particularly busy, don't fret.  The pizza box has ample room so that four or five people can place their drinks and slices right on top of it. 


 
As for the quality of the pie, I can't overstate that it is absolutely superb!  Stone ovens give it that perfect char and just the right amount of pull, that any self respecting New York style pie must have.   


Incredible high butter fat mozzarella is balanced in perfect proportion to the simple yet tasty sauce, and toppings of the utmost quality.

I've never had a bad meal at Pizza Casbah, and I'm one of their biggest fans.  I'm also one of their biggest cheerleaders, turning dozens of friends and acquaintances onto this gem of Northern Colorado.  I practically grab people and shake them when I hear they have yet to dine there! Not one person I've recommended Pizza Casbah to, has walked away disappointed or hungry.

Pizza Casbah is the perfect place to have an exquisite slice of New York pie on a first date, a night out with family and friends, or even by yourself for a personal "Pizza-Zen" moment (something everyone needs from time to time).  Make sure to check out their website for some great coupons, and other menu options such as their killer hot wings and Chicken Parm sandwiches.  I also hear they have a great Gluten-Free version of their pie as well, and it warms my heart that folks with allergies don't have to be deprived of the wonder that is Pizza Casbah Pizza.

If you dig New York style pizza, I highly recommend giving them a try. Not too many places around these parts get it as close as Pizza Casbah does.
